*It is important to make sure that you dry your high carbon steel knife thoroughly after washing. Any moisture left on the blade will cause it to rust, making the blade more susceptible to knicking or chipping.
Please note: many of the Miki Hocho / Japanese kitchen knives that are for sale here have either full tang or partial tang handles. A partial tang handle does not equate to a decrease in quality. The knife has incredible balance and a great feel in your hand, and most importantly, it can effortlessly cut through anything I've put in front of it on the cutting board.
